2 easy gluten-free breakfast options

Living gluten-free has really gotten me into experimenting in the kitchen. Where I was usually the yoghurt and granola for breakfast type, I recently brought some variety into my breakfast routine with these 2 easy gluten-free recipes. A little heads up they are no groundbreaking new recipes but they involve very few ingredients and only take about 5 minutes and that’s what we’re looking for in our busy morning routines, right?

Banana & cinnamon oatmeal

The first breakfast option is a simple banana and cinnamon oatmeal, which is perfect for those crisp fall mornings. You can whip it up in about 5 minutes and it is very filling so snacking between breakfast and lunch is no longer a necessity.

For 1 portion you will need:

  • 1 banana
  • 100 gram (or half a cup) of gluten-free rolled oats
  • 125 ml almond or regular milk
  • 125 ml water
  • A pinch of cinnamon
  • Topping of your choice (I use almond flakes & cacao nibs)

Let’s start cooking:

  • Start by pouring the rolled oats, water and your choice of milk in a small pan and put it on medium heat on the stove.
  • Cut up the banana in slices and add half to the pan.
  • Add a pinch of cinnamon and your oatmeal will be done and more solid in about 5 minutes. Remember to stir regularly.
  • Pour the oatmeal into a bowl and decorate it with the remainder of the banana and your topping of choice. I usually add almond flakes and cacao nibs, for some texture and chocolate flavor.
  • Your gluten-free breakfast is served.

Banana & egg pancakes

This banana & egg pancake recipe is even easier than the first one. It is however my go to recipe for when I have hardly any food in the house.

For 3 small pancakes you need:

  • 1 banana
  • 1 egg
  • Cinnamon or chocolate paste as topping.

Let’s start cooking:

  • Start by cutting up your banana into thin slices.
  • Mix half the banana slices with the egg (in the blender or by hand) until you have a smooth batter.
  • Now all you have to do is bake you pancakes.
  • I decorate mine with the remainder of the banana and cinnamon.
